Mango Tomato Cucumber Summer Salad

Fresh and zesty! Sometimes I feel like a salad without leafy greens, and this one combines the best of what summer has to offer. If you have access to garden-fresh cherry tomatoes, all the better. Either way, this combo highlights the simple beauty and delicious flavors of fresh fruits and vegetables. Yay!

Serves 4 (or 1 hungry raw vegan).


4 cups cherry tomatoes, halved

1 orange bell pepper, diced

2 cups diced mango

1 cucumber, diced

handful pine nuts, toasted if desired

juice of 1 large lime

1/4 cup fresh parsley, minced


Mix it all up and enjoy! The key to this dish is the quality of ingredients ; )
