Fully Loaded Stuffed Sweet Potatoes
For those transitioning to a plant-based lifestyle, or those who just want a hearty dinner, this is a great recipe to satisfy. Sweet potatoes are one of the easiest cooked foods to digest, are packed with energy and nutrients, and are the star of this dinner.
While I don't use 'meat alternatives' too often, I've found them to be a fantastic way to introduce folks to vegan food, and the Beyond Meat Chicken Strips are a very tasty addition to the veggie-full stuffing. Serve with a nice big salad and you've got yourself a rockstar dinner from the earth.
