Quinoa Pizza Crust
The possibilites of this crust are endless. You could even make them thinner and use as sandwhich bread, or add a sweetener and make them in to stuffed dessert crepes. Once you get the hang of it, the prep time is pretty minimal. If you're going to eat bread, it doesn't get much healthier than this folks. I'm slightly obsessed with them and make frequently-- as you can see!
Makes 2 personal pizza crusts.
1 1/2 cup quinoa, soaked overnight
1/2 cup water
2 Tbsp olive oil
2 Tbsp dried Italian herbs
1 tsp baking powder
1 tsp salt
Optional: add handful fresh spinach or basil to make green crusts
Drain and rinse soaked quinoa, place in to a high-speed blender, add in the other ingredients and whiz until smooth.
Pour in to 2 non-stick 7 1/2-inch pie pans and bake at 400F for 15 minutes. At this piont you should be able to easily get a rubber spatula under and flip them (if not let them cook a few more minutes), and cook the other side for 5-10 minutes more.
Add your desired sauces and toppings and warm in the oven for a few minutes until melted. Buon Appetito!
