
In colder weather, instead of a morning smoothie, I like to have something warming and cozy, but still start my day with whole fresh fruits.
This comes together in a few minutes, packs a lot of energy, and can easily be adjusted depending on what's in season.
Serves 1. Double the quantities for a ~600 calorie breakfast meal.
INGREDIENTS
2 bananas
1/3 cup coconut water
1 chopped peach/nectarine or handful mango chunks
handful fresh blueberries/raspberries
dash vanilla powder
dash cinnamon
dash maple syrup
sprinkle of chopped walnuts
small spoonful almond butter, optional
METHOD
Place bananas in a saucepan and mash with a fork. Mix in coconut water and put over low-medium heat. Add the rest of your toppings, combine, and heat for a few minutes just until warm. Voila!
